First Family Camping Trip!

We went on a little camping trip over the weekend and I have to admit, it was quite fun!

I am not much of the camping type but after this trip, I think I can handle them...but just for one night...heehee

It was the first time we have all gone camping together...

Jenner was taking it all in and loving it...

especially mom's diet coke...

Addy was pretty good but it's hard with an infant...

you can't ever put them down to just chill for awhile...

Jennerisms...

Jenner is freakin hilarious...I laugh so hard at her every single day...so I though I needed to share some of her 'isms'...mostly so I don't ever forget them...

The other day I was in the tub and she says..."Mom, I am so proud of you"...I think because we have been talking about going potty and how proud of her I would be.  (sidenote:  she pooped in the potty today...Yay!)

When I was getting out of the tub she held up her hand to shield her face and said, "Get some clothes on!"...hahaha

Chris was outside with her the other day and he told her it was time to go in the house and she said, "Come on baby, let's get it on!"...so funny!

She was jumping on my bed while I was trying to change Addy and I asked her what she was doing, and her response was, "I not doing anything!"...

She is obsessed with the DS (hence the picture) and whenever she is playing is but doesn't want anyone else to play it when she is done, she explains that it needs to be charged and that no one can play it now. 

She came out of Taylor's room the other day with a fake cry and said, "Tay Tay push me"...

My baby is getting so big...

Having my little Addison has been such a bitter-sweet experience...don't get me wrong, I absolutely love her and love having her around but I know for a FACT that she is my last baby...and that is so hard for me sometimes.

I love that she is growing but part of me hates it too...I hate that these are the last milestones that I will experience with one of my own babies...I hate that she is sitting up and eating solids...I hate that she is trying to roll over...I hate that she is 8 months old already and won't cuddle with me anymore...I hate that her poopy diapers really stink instead of that sweet newborn poop...I hate all of these things...

But I love that she giggles and laughs so hard at her siblings...I love that she can sit up on her own and play with little toys...I love that she is a good eater and can put cheerios in her own mouth by herself...I love that she can babble and sing for hours on end...I love that when she smiles, her entire body flexes and shakes with excitement...I love that she knows me so well and gets upset when she can't see me...I love when she nurses and she gives me a mischevious grin inbetween sucking...I just love her so much...

She is currently 16 lbs which is huge for what I was used to with Jenner...I don't think Jenner was 16 lbs at 1 year old...

So, here are some shots of my very last baby...sniff sniff...

Mexican Lasagna...

This is quite possibly the best thing I have ever eaten...no really...the BEST!

In fact, it is so good...I'm thinking of making it again this week!

Mexican Lasagna:

8 corn tortillas

1 lb. hamburger

1 can petite diced tomatoes, drained

1 can pinto beans, drained and rinsed

1 pkg. taco seasoning

1 can olives, sliced

shredded cheese...lots of it!

Brown hamburger with salt and pepper and a little onion.  Add your taco seasoning with about 1/3 cup water.  Add tomatoes and pinto beans and let simmer for 10 minutes.

Spray a small casserole pan (I used an 11X7 pan) with Pam and lay 2 tortillas in the pan.  Next layer on some of the meat mixture, some cheese and some olives.  Layer 2 more tortillas, then some meat mixture and some cheese.  Repeat (leaving the rest of the olives for the top.)  I ended up with some meat mixture, some cheese and olives for the top.  There are four layers total.  Sorry I am confusing in my explanations...but I'm sure you get it.

Bake in a 350 degree oven for 20-30 minutes or until it is all warmed through...

This is so good and I can't wait for you to try it!
