Loving It...

Lately I have a few 'Loves' in my life that I wanted to honor in the name of Valentine's Day...
I know I am late on this but who gives anyways...

I just got this little gem the other day and I am already in love...
so useful and so fun to use...



I just started watching this show the other day and now I am obsessed...
It is amazing what the chefs can come up with in such a small amount of time and with all those weird ingredients!


Another show that I love...
mostly because it's dumb and mindless...
but also because I am sorta proud of Chelsea for growing up a bit...
weird, I know!


My bro-in-law got me hooked on this stuff...
it's so good but doesn't sound good in the slightest...
I love it...
 
 
I used to make sugar cookies all of the time and then got really sick of them...
since then I have been searching endlessly for a good recipe...
and I found it (see earlier post)
and now I want to make them again!


I really really love my sleep and I sure do miss the relationship we used to have...
now we are sorta broken up and not speaking with each other...
I can't wait for the day when we are back together...
and if you have any special remedies for getting sleep, send them my way!

And let's not forget my boyfriend...
Diet Coke...
and more specifically, McDonald's Diet Coke...
so if you are ever around the McD's and feel like doing a girl a solid...
I would love you forever!
hahaha

And last but certainly not in the least...
I love this guy...
he gets me...
he knows me...
he puts up with me...
he completes me...
He is my one and only!

Cutler's Sugar Cookies...



I found this amazing copycat recipe on pinterest...I must say that they are as close as it gets to a scrumptious Cutler's sugar cookie...Have fun making them!

Cutler's Sugar Cookie:

3 sticks butter, softened
2 cups sugar
3 eggs
1 tsp. vanilla
1/2 tsp. salt
1 1/2 tsp. baking powder
5 cups cake flour

Mix butter and sugar until fluffy, about 3 minutes.  Add eggs and vanilla and mix well, scraping sides of bowl.  Add salt, baking powder and cake flour.  Chill dough.

When dough is ready, preheat oven to 350 degrees and roll out dough about as thick as a pencil and cut out into shapes.  Place on ungreased cookie sheet and bake for 10-15 minutes.  They don't look done but may have some cracks on top and a little brown on the bottom edges.  I found that even though I cooked most of them at 13 minutes, it was a smidge too long.  They continue to set up after they are out of the oven.

Icing: (My recipe)

Powdered sugar
Karo syrup
water
flavoring (Almond, lemon etc.)

Get about 3 cups of powdered sugar in a bowl and add maybe 2 Tbsp. Karo.  Add some water and whisk it around adding more water if needed.  The consistency should be like the Karo syrup.  Add your flavoring, in this case I used Almond, and any colors you want.  When cookies are cooled, dip them upside down into the icing, scraping the excess off on the sides of the bowl and put them on a cooling rack so the icing will drip down around the cookie.  Decorate.

Peanut Butter Chocolate Chip Cookies...


I got this recipe off of Pinterest and you can view the link here...(of course I omitted and added a couple of things but they are essentially the same)

They are so good and everyone in my family is loving them...
I did add some mini M&M's to the mix cuz who doesn't love those...

Peanut Butter Chocolate Chip Cookies...

Ingredients:


* 1/2 cup butter, softened
* 1/2 cup peanut butter
* 1/2 cup granulated sugar
* 1/2 cup packed brown sugar
* 1/2 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1 egg
* 1/2 teaspoon vanilla
* 1 1/4 cups all-purpose flour
* 1/2 to 1 cup semi-chocolate chips (I added 1/2 cup choc chips and 1/2 cup mini M&M's)
Preheat oven to 375 degrees.  Mix butter and peanut butter until smooth.  Add sugars and mix until fluffy.  Add soda, powder and mix well.  Add egg and vanilla, mix. Add flour and mix until combined, scraping sides if necessary.  Then add choc chips and M&M's.  Use the small pampered chef scoop and place on greased baking sheets.  I rolled my cookies after scooping so they would be smooth looking.  Bake for 7-9 minutes being careful to not overbake.  They won't look or feel done but I can assure you that they are.  They just need to set up first.  Makes about 36 bite sized yummy goodness cookies.

Facts

Fact:  I'm tired.  Addy got her tonsils out Monday and she is a beast.  She is so sore and it is so sad to watch.  In the night when she swallows and cries it really breaks my heart.  Poor little sad one!

Fact:  I am bored with my blog.  What to post is just not on my list of priorities right now.  I still love it but I am struggling...Give me some suggestions of what to post.  That should be fun!

Fact:  I have tried to quit Diet Coke yet again...big FAIL!  I just love it way too much.  I am a victim to addiction...Hi, my name is Amy and I am a Diet-Coke-A-Holic.  Thank you...Thank you...I feel your love!

Fact:  Why do I think I need to quit anyways?

Fact:  My boys are silly.  They make me laugh every day.  The little girls are especially enamored with them and they are going to be so sad when they go back on track next week. 

Fact:  It's been an unusually warm January and I like it...but I am wondering what that's going to do to the rest of the year.

Fact:  I have a lot going on in my life right now and I am struggling with getting it all done.  Do you do that?  Struggle?  I mean, we all have stress and we are all busy but when I get more things to do than normal it really throws my mojo off...

Fact:  My breath really stinks.  Like REALLY stinks.  ewwwww

Fact:  I love that part of the day when I can take off my bra, put on my sweats and sit on the couch and watch meaningless tv shows.  Totally meaningless and something that doesn't require too much of my attention because let's face it, I am totally done at that point and just need to sit for awhile.

Fact:  Chris hates that part of my day because it's when I can totally tune out everything going on around me...even if that part of my day lasts like only 37 seconds, it's still a favorite for me.
